Vegetarian Bow-Tie Pasta with Broccoli and Tomatoes

I know I’ve been kind of quiet on the exercise front, but I assure, I’ve been exercising.  I’ve been keeping up with a 3x a week roller derby practice schedule, and trying to get in at least one run a week.

I’m looking into signing up for my first official 5k towards the end of October to serve as motivation to run a bit more. 

The weather seems to be heading into the lower 90s, which means the cooler running weather is just around the corner (hopefully).  I’d like to see how running on the incline treadmill has improved my outdoor running.

Last night, I made a quick and easy pasta dish with some of the leftover veggies from Sunday’s festivities.

I combined a can of northern beans, with some grape tomatoes, broccoli and sun dried tomatoes in a frying pan.

Just in case you were wondering, northern beans will explode if they get too hot.  And they will hit you in the arm if you stand too close.  I recommend cooking this on a medium heat seating, medium low if you’re a bit bean gun-shy.

I cooked this in a bit of Garlic Gold oil which was amazingly delicious.

Its taken me forever to buy this, but I’m so glad I did. 

I asked Brian to pick up a fun-shaped pasta from Sunflower Market and he went with the fancy bow-tie, a personal favorite.

I cooked the pasta according to the directions on the package, and then added it to the pan of veggies.

I just let it hang out for a bit, added some crushed red pepper, and dinner was served.

Are You Ready For Some Football?

Because we sure were!

Sunday kicked off the first Football Sunday of the NFL season, which is a pretty big deal in our house. 

For the past several years, we have invited our football loving friends over to enjoy a day off food, beer, and shenanigans.

Brian woke me up bright and early, like a little kid on Christmas.  He scurried around, making sure everything was in working order, i.e the kegerator, the dual TVs in the man room, the TV in the living room (soon to be dining room), and the newest addition, the outdoor bar TV.  Everything important of course.

I focused on making sure there were snacks available to help fuel everyone for a big day of cheering for their favorite team.

Lets look at the spread.

Grape Jelly Meatballs
Sauce
- 32 oz jar of grape jelly 
- 2 12 oz jars of chili sauce
Meatballs
- A buncha frozen vegetarian meatballs or real meatballs
- OR 2 lbs of ground beef
-3/4 bread crumbs
- 2 eggs, beaten
- dried minced onions
- salt and pepper to taste

Combine the grape jelly and chili sauce in a crock-pot on high and allow the contents to get to know each other for awhile.  If you are making your meatballs from scratch, combine those ingredients together and form into small balls (yes, small balls).  Line your small balls on a baking sheet lined with aluminum foil and bake at 400° for 15-20 minutes. 

Add your small balls into the crock-pot, dial the temperature down to warm and let them swim around for awhile.

Your guests will show up and love them. 

We also had plenty of other food available.

Eric also made a fantastic smelling green chili which made me want to look into finding a vegetarian version, STAT.  Plus there were lots of pretzels, chips and beer.

They spent a long time romping around in the yard (and the pool), before they decided they wanted to come inside.  We had an instance of “Bumpuses!!” a la the Christmas Story when the dogs managed to open the back door by themselves and came romping in wet dirty paws and all.  We finally corralled them into the living room.  Not having carpet in there makes it an excellent place for wet dogs to hang out.

You might recognize Charlie in the back from Heather’s blog, Cole is front left, and She Stadium in front right.  They were drooling over the pepperoni rolls coming out of the kitchen.  Notice the blurry tails, they wouldn’t stop waggin’!

It was quite the successful first football Sunday, and we were tuckered afterwards.

Labor Day Weekend

What was supposed to be a four day Labor Day weekend for me, turned into only having Saturday and Monday free.  I worked Friday and Sunday, squeezing in roller derby practice and a lovely dinner with Marisol.

We went to Windsor, a trendy restaurant just north of downtown Phoenix.  I had high hopes for this place since it has such a great selection of salads and sandwiches, and it mostly lived up to what I wanted it to, except for a few things.

This place has a lovely outdoor patio, but seeing as the temperatures are still hanging out in the 110 degree range, Marisol and I chose the air conditioned inside seating area. 

While the restaurant and bar are nicely decorated, the ambient lighting was just a bit too dim.  I understand creating a vibe, but I’d like to see who I’m sitting next to.  Perhaps slide the dimmer switch a scosch north.

Big props to the cocktail menu, but I chickened out and stuck with an alright glass of Zinfandel.  Marisol got a cocktail involving ginger and other stuff and it was delicious.  I know that was extremely descriptive and you all can now go make this drink at home.  You are welcome.  I do know it came with a garnish of candied ginger.  And not a blueberry.  Don’t ask.

I love Bahn Mi sandwiches, so I went with the Bahn Mi Halibut sandwich with a side of coleslaw.

Everything was excellent, but I feel like the mayo could’ve have been a lot spicier. The bahn mi sandwich I get from Lee’s would definitely win in a competition, but Windsor’s version was quite tasty.

One major complaint about our visit at the Windsor was our waitress.  While it was a holiday weekend, the place was far from empty.  In fact, there were quite a few tables filled with people, but not so busy we were taking up a needed table, so I was surprised when our waitress brought our check over without asking if we wanted anything else.  Just a “whenever you’re ready” smile. When I informed her we actually would like a second round of drinks, she apologized, took the check back and went to place our order.  But that was really the last time we really saw her.  Another server brought our drinks, yet another brought over a plate of delicious complimentary cookies for the adorable ice cream shop next door, Churn, and then finally the bartender brought over our final tab at the end. 

If there’s one thing Marisol doesn’t like, its tomatoes and snotty servers.  Don’t get her started.

All in all, I thought the food was tasty, the atmosphere hip and casual at the same time, but the service needs to be worked on a little.  I just wish I had saved room for some ice cream from next door.

By the time Monday rolled around, I just couldn’t find the motivation to go into work.  So instead, I spent the day with Brian and the farm, which was lovely. 

We got a wild hair to rip on the carpet in our living room.

Since we have the man room as our everyday tv room, this living room stays empty.  We never use it.  So the plan is to turn it into a dining room.  Our only table to eat at is the island in our kitchen, and we never use that as an eating space.  When we have people over for dinner, we don’t have a dining table for everyone to sit at.  You better be good at balancing your plate on your knees, or you’re in trouble.

So, operation dining room officially started Monday.  We’re going to look at laminate wood flooring samples this weekend, which is very exciting.

Even Shea thinks it pretty exciting.

Sunday Morning Pancakes

I was an early riser today.

It might have had something to do with two dogs staring at me begging to be let out.

It might have something to do with my embarrassing amount of sleep I got yesterday.

It definitely had something to do with a sudden intense craving for pancakes.

I looked up a quick recipe online and got to work.

This batter ended up being suuuuuupppppppeeeeerrrrr thick.  No worries, I just added a bit more soymilk to get it to the consistency I wanted.

I used a non stick frying pan, and wiped it down with a paper towel with a bit of vegetable oil soaked into it.

My dad taught me that trick.  Just make sure while putting the oil on the paper towel you don’t start to wonder if you should take a picture of the process and then end up pouring oil onto the paper towel, down your arm and onto the counter.  That is too much oil.  Too much.  FYI.

Super thick.  Typically, I prefer much thinner pancakes, but these were decent.  Brian enjoyed the fluffiness and so that’s all that matters.

Vegetarian Sheppard’s Pie

If you caught my Overtime post yesterday, you can probably guess I haven’t had a whole lot time to cook a healthy meal when I get home from work.

Luckily I got hitched to one of the best guys around.

All week he’s been either starting dinner or cooking the whole meal by himself.

Last night I came home to Vegetarian Sheppard’s Pie in the oven.

Yup.

I sure did.

He got the recipe from here, and adapted the ingredients to be all vegetarian.

It smelled so good when I walked into the house, and when he pulled out his creation from the oven, I started salivating.

Overtime Sanity

This past week, I have been buried under my desk with work that only continues to grow… and grow… and grow, with no end in sight.  Couple that with a holiday weekend coming up, and the drowning feeling continues.  Only, now I have weights on my ankles.

So lets just say I’ve been putting in my fair share of overtime.

Ugh.

Often times I feel like overwhelmed

But I’ve been getting by. 

How? Adjusting my at home schedule to maximize my energy and family time.

1.  Unplugging

    • Huh?? Amy unplugging?  Yup.  Aside from writing a blog post here or there, I’m making a concerted effort to spend more personal time with my husband.  I sit and stare at a computer screen all day long, the last thing I need to do is come home and attach myself to my computer or ipad.  Unplugging is good for relationships, relieving eye strain and aching carpal tunnelness.

2.  Going to bed early

    • Again, what?!?  While this is still a work in progress, I’m making an effort to get into bed by 10:30.  I allow myself some reading time to ease my mind and unwind, but I’m really trying hard to be asleep by midnight.  Since I have frequent bouts of insomnia, I’m doing the best I can to avoid this.

3. Working out in the AM

    • Did you just fall off your chair?  I’ll give you a second to get back up….. Ok, I’ve only had one morning workout so far, but it wasn’t that hard.  I’m hoping to set up a routine where I’m waking up an hour to an hour and a half before I have to start getting ready for work.  I get a workout in and have time to leisurely get ready for work.  I’m tired of waking up at the last minute and scrambling to rush out the door.  I’ll keep you updated on this.

4.  Healthy eats and Drinking lots of water

    • I pack a giant feed bag when I trot off to work in the morning, filled with healthy snacks and a filling lunch.  This prevents me from shoveling in office snacks or staring absent-mindedly at the vending machine.  Even if I don’t eat something that day, its there if I need it.  Drinking water is two-fold.  It keeps me hydrated and in line with my 8 glasses of water a day, and makes me get up from my desk and take a walk to the bathroom.  Office exercise!

This is all a work in progress, but its necessary to stay sane.

Get The Heck Outta Here

This year has been a year of sending people off to live a life outside of the state of Arizona, and this week its my friend Ziggy’s turn to fly the coop.

While I’m sad he’s not going to be around on a regular basis, I know he’s going on to bigger and better things.  Plus, I’ll have another friend to visit while I’m on the east coast.

Ziggy picked a gem of a restaurant to have his last hurrah dinner at, Barrio Cafe in Phoenix.

I never would have known this place was a delicious Mexican food restaurant had I just driven by 16th St.  We parked behind the unassuming building and were greeted by colorful murals in a dia de los muertos motif.

The inside was small and cozy, and smelled delicious.

We were served bread with an amazing red pepper type of salsa.

Which made Brian especially happy.

There was an extensive tequila menu, but I decided to go with one of their signature drinks, the Lowrider Margarita.

Granted, it was a bit on the pricey side at $12, but it was probably one of the best margaritas I’ve ever had.  I definitely could have slurped down a second (or third ifyouknowwhatimean), but with the hefty price tag, I switched to a Dos XX for my second and final beverage of the evening.

Guacamole was ordered for the table, which was prepared table-side.

Our waiter wasn’t the most pleasant gentleman I’ve ever encountered, and seemed a bit irritated during the whole process, but he mixed up a delicious guacamole.

Obviously this picture was taken after some serious inhalation happened, but it was served with some homemade tortilla chips which were fantastically crunchy.  I could have just had that as my meal.

For my entree, I decided on the Enchiladas de Hongos, or mushroom enchiladas with goat cheese and white truffle oil.

This was outstanding.  Savory, creamy, slightly sweet and so very, very rich.  There was no way I could fit it all into my belly.  The enchiladas were basically filled with goat cheese and then topped with all sorts of different mushrooms.  I loved the grilled veggies because it cut down on the decadence of the rest of the dish.

The evening ended with a delicious Oaxacan chocolate cake with vanilla ice cream, which I did not snap a picture of.  I was too busy getting the perfect ration of warm cake to cold ice cream.  Forgive me.

We’re sad that Ziggy has to go, but at least he picked a delicious place for his Get The Heck Outta Here dinner.
