Did you catch the first part of my weekend?

Well after all that fun, we still had a full day ahead of us on Sunday. 

We raced back to Phoenix, to shower (definitely needed), throw on our jerseys and head out the door to do some tailgating.

Soon it was time to head into the stadium, so we packed everything up and joined the mass of people to get in.  Lets just say it was hotter the heck outside, much different then the perfect weather up north. 

The sun was beating down, there was a large crowd and NO SHADE.  It was a beast, but we finally reached the cool air conditioning of the stadium.

There were Giant fans everywhere! The two guys in front of us were way into them.

Our seats were redonk.  It was better than watching the game on TV.

We could see all of our favorite players.

It was an AMAZING game and it looked like the NY Giants were going to lose until the very end.  Thanks to a controversial call, the Giants pulled ahead to win at the end of the 4th quarter!

Lets just say, I was spent by the end of the weekend.

Roughing It

Once again, this past weekend was spent running around having amazing times with friends.

A few weeks ago, James and her coworker Steph (nicknamed Staylor and will hereforth be referred to as such), mentioned a potential camping trip, and in true Amy fashion, I invited us along.

Because that’s how I do.

And I’m so glad I did.  Even though we realized we were already booked to go to the AZ Cardinals vs NY Giants game on Sunday. 

Who says you can’t do it all?

Camping took place at Woods Canyon Lake at the Aspen Campground, and it was glorious.

Not only was the weather ridiculously cooler than Phoenix, but the fresh air and company was fantastic.  It didn’t even feel like we were in Arizona anymore.

Paying the Price

All of my running around and wearing myself out has finally caught up to me.

Let me tell ya, I’ve got a sexy voice going on right now.  Meow.

I’ve managed to trudge through work, much to the chagrin of my coworkers, but its a busy, transitional time at work.

We hit up Thai Basil, which is a delicious restaurant by Marisol and my workplace.  Luckily Natalie is able to drive to our part of town because Marisol and I are usually chained to our desks.  It was so nice to get out and catch up.

I was craving soup like it was my job, but was sad to hear the soup is only on the dinner menu.  No worries, I’ll “settle” for the Panang Curry.

Chock full of veggies, tofu and delicious peanut curry.  Oh Thai Basil, I love you so! 

Best part was this supplied lunch and dinner for the day.

Other than lunch, my life is filled with theraflu, cough drops and ramen.  Don’t be jealous.

Easy Kale and Vegetarian Sausage Dinner

I hope you all enjoyed the pictures from this weekend.  While this trip south of the border wasn’t exactly what I had expected, the scenery was gorgeous as usual. 

This weekend we are going to try our hand at camping, which we haven’t done for a couple of years.  Lets just say, I hoping it doesn’t follow the same route as last time.  Sunscreen will definitely be at the top of the checklist. 

Luckily I have a friend with a bunch of camping gear and he’s willing to lend it to us for the weekend.  Otherwise, we have a tent… and a…. well… tent.

Right after our camping adventures, we will be attending the NY Giants game on Sunday.  It’ll be a whirlwind few days, to say the least.

In preparation for the weekend, I got some laundry in and had intentions to go to Target, but the treadmill beat out shopping. 

I’ve been loosely following the C25k program, but I have been mentally stalled at week 5, day 1.  Essentially, the pattern is run 5 minutes, walk 3 minutes.  After that, the running portion gets bumped up to 8 minutes, which I mentally did not want to tackle. 

Since I’m starting over with my running attempt, I’ve lost a lot of confidence in my ability to run for extended periods of time.  So that 8 minutes seemed like such a large jump and I couldn’t make myself do it.

Until today.

I karate chopped that 8 minutes.  The first 8 minutes were strong and I felt like I could keep going, but I didn’t want to burn out.  I walked 5 minutes, according to the program, and started the second 8 minute run portion.  It was definitely a bit  harder to keep going, but I just kept telling myself to push through.  Amazingly, but the end of it, I still felt strong. 

Sometimes I feel silly for patting myself on the back for 8 minutes of running, when people are running 8 miles, but everything’s relative.  These are my personal goals, and I’ll go at my own pace, thankyouverymuch.

Before I worked out, I threw together a delicious simple meal, similar to my Kale and White Bean Soup

I crave Field Roast’s apple sage sausage.

I cooked some onion and the sausage in Garlic Gold olive oil.

Threw in a bunch of kale, with stems cut out.  I also added in some garlic gold nuggets and red crushed pepper for some flava.

Then I covered the pot and allowed the kale to wilt down.

Yum.  I had some leftover Brussel Sprout Salad I made the other night, which went perfectly with the kale and sausage.  The craisins added a nice touch of sweetness to the saltiness of the sausage.

Kale and White Bean Soup with Vegetarian Sausage

While the rest of the world is welcoming the fall weather back into their lives, Arizona is still hanging out in the triple digit weather.

But I have been craving soup like its my job.  Crank up the air conditioning, lets snuggle up to a warm bowl of soup.

I’m just happy no one around to witness to my soup making endeavor. 

I’ve mentioned this time and time again, but I’m a fly-by-the-seat-of-my pants chef.  I rarely have everything out I need, which allows for inopportune trips to the pantry or fridge to search for that ingredient I forget and now can’t find.  But everything usually works out.

Usually.

Thank goodness this soup did.

Kale and White Bean Soup with Vegetarian Sausage

  • 2 tbsp olive oil
  • 2 links vegetarian sausage, my favorite is Field Roast Apple Sage Sausage
  • 1 onion, chopped
  • 1-2 cloves of garlic, minced
  • 5 cups of vegetable broth
  • Salt/Pepper to taste
  • 1/4 tsp cayenne pepper
  • pinch of crushed red pepper
  • 1 bunch of kale
  • 1 15 oz can of white beans

First, cook the vegetarian sausage in a soup pot.

Yeah… I’m aware that doesn’t look very appetizing and many an inappropriate comment could be made, but lets act like civilized human beings.

Note to self, veggie sausage doesn’t crumble the way real sausage does, so next time, I might want to crumble it  beforehand.  Otherwise, a lot of time and energy will be spent stabbing the sausage with a wooden spoon.  Stab, stab, stab.

Once the vegetarian sausage gets browned, remove from the pot and set aside.  I added a bit more olive oil and plopped in the onions to cook till they were translucent.

During your free time, feel free to prep the kale.  If you chose to stab your finger with the knife, make sure to do it hard enough to yelp and scare your dog, but not so hard that you break the skin. 

Just words of advice.

So kale.

Wash thoroughly and cut out the tough stems.  Stab finger.  Yelp.  Scare dog.  Notice you are not bleeding.  Continue.

Chop it up.

About this time is a good idea to remember to chop up the garlic.  Except you’ll notice the kale is taking up the whole cutting board.

Shove over kale, make room for garlic.

Keep in mind the onions are cooking this whole time, and probably starting to get annoyed they are being ignored.

Toss in the garlic and sausage and let cook for about 30 seconds (or closer to a minute if you cook like I cook).

Next, pour in the vegetable broth.

Use a wooden spoon to scrap all the delicious bits off the bottom of the pot.  That there’s flavor!

Bring the mixture to a simmer.  While this is going, you might want to open your can of beans.  In my case, it took me 10 minutes to open one can.  I think we need a new can opener.  I now have a blister.

Siouxsie also thought she was going to get some food.

Every time the can opener comes out.  Every. Time. And she eats dry food.  I don’t get it.

I’m going to let you know I drained the beans in a sink full of dirty dishes.

I’m classy like that.  I could have lied.  I did eventually put the dishes in the dishwasher and proceeded to take a staged picture.

Listen, cooking’s hard enough without having to do dishes in the middle of the whole shebang.

Add the kale to the broth and let cook for about 10 minutes before adding the beans.  Once the beans are added, let the soup simmer away for about 15-20 minutes or until the kale is tender.

After that, the next thing to do is eat.

Slurp.  This soup is out of this world.  The kale is still chewy and flavorful, just what I was craving.  The beans and sausage are so flavorful and the cayenne pepper gives the soup a subtle kick to wake up the senses.

Hey Bob!

I’m kicking this Saturday’s booty ya’ll.

For some reason, this weekend feels like the first one in a long time where I don’t have anything to do.  Saturday is wide open for getting things done, but with no pressure or timeline.

Shortly after waking up, I motivated to get my dupa onto the treadmill and got in a run/walk session.

  • 5 minute warm-up
  • 5 minute jog
  • 3 minute walk
  • 5 minute jog
  • 3 min walk
  • 5 minute walk
  • 5 minute cool down

Quick, easy, and painless.  Holla!

Before and after the treadmill, I showed the laundry monster who’s boss. I sensed fear in its eyes.  I still have plenty to do on that front, but I’m not scurred.

After that, Brian and I had a date with Bob Villa at Lumber Liquidators.

We narrowed it down to 3 samples (one not pictured) and decided to stare at them in the actual room before officially purchasing our new floors.  This is a big thing for Brian and me because we are such big impulse buyers.  We see something we like and we buy it.  It usually works out in our favor, but its nice to think something out before making our final decision. 

Other things I’ve been up to this week:

  • Derby practice and skating 5 miles on Thursday evening with my team
  • Getting new outdoor wheels and bearings for my skates, so much easier to skate outdoors
  • Getting my hairs did!

Love it.  Its been a hot minute before I dragged my do to a salon, and it was long overdue.  I’m sad because my stylist moved to Washington a while back, and has been making monthly trips back to Phoenix for her clients, but after October, everything is up in the air.  Sad face.  I’ve had a long and sordid history with hair stylists, and she is the first one I’ve really connected with AND she does amazing work and now she’s leaving.  Boo.

Alright, the laundry monster is giving me the greasy eyeball, I gotta go beat it down.
