I was an early riser today.
It might have had something to do with two dogs staring at me begging to be let out.
It might have something to do with my embarrassing amount of sleep I got yesterday.
It definitely had something to do with a sudden intense craving for pancakes.
I looked up a quick recipe online and got to work.
Dry ingredients.
Wet ingredients.
All mixed up.
This batter ended up being suuuuuupppppppeeeeerrrrr thick. No worries, I just added a bit more soymilk to get it to the consistency I wanted.
I used a non stick frying pan, and wiped it down with a paper towel with a bit of vegetable oil soaked into it.
My dad taught me that trick. Just make sure while putting the oil on the paper towel you don’t start to wonder if you should take a picture of the process and then end up pouring oil onto the paper towel, down your arm and onto the counter. That is too much oil. Too much. FYI.
And now for the fun part.
Flip.
I cooked 2 at a time and kept them warm in the oven while the rest cooked up.

I tried to get a picture of Brian’s pancakes, but he was hungry and ready to dig in.
So I had to settle for just my own plate.
Super thick. Typically, I prefer much thinner pancakes, but these were decent. Brian enjoyed the fluffiness and so that’s all that matters.
I’ll leave you all with a crime scene. Sid looks guilty.
